Sesame Soy Shitake Mushrooms

Ingredients

  • 8 small-medium shitake mushrooms
  • 1 tablespoon toasted sesame oil
  • 5 teaspoons less sodium soy sauce
  • ¼ cup water
  • 8 fresh cilantro leaves

Instructions

​Remove the stems from the mushrooms and discard. Wipe off any dirt from the caps with a damp paper towel. Using a paring knife, lightly score an “x” in the top of each cap.

In a medium nonstick skillet, heat the oil over medium heat. Add the mushrooms and toss to coat. Then turn them cap sides up and cook for 1 minute. Add the soy sauce and water. Simmer, basting the mushrooms, for 5 to 7 minutes, until the mushrooms are tender and the sauce has reduced and thickened.

Serve the mushrooms topped with cilantro leaves.
