Chop the onion.
Place a medium skillet over medium-high heat. Add the oil and heat until it shimmers (1 to 2 minutes). Add the chopped onion and cook, stirring with a wooden spoon, until softened, 4 to 5 minutes.
Add the beef and cook, breaking it up with your spoon, until it is no longer pink, 4 to 5 minutes. Add in the chili powder, cumin, garlic powder, and salt and cook, stirring, for 1 minute. Add the water and cook 1 to 2 minutes more until the meat is nice and juicy but not soupy. Turn off heat.
Place a small skillet over medium heat. Heat each tortilla 1 to 2 minutes per side (use tongs to flip). Keep them warm by wrapping them in foil until you are ready.
Get your toppings ready. Reheat the meat mixture, if necessary, then fill your tacos.
