Broiled Pepper Jack Quesadillas

Ingredients
- 2 8-inch flour tortillas
- 1/2 cup refried black beans
- 1/2 cup grated Pepper Jack cheese
- 1 avocado
- your favorite hot sauce
Instructions
Heat the broiler (with the oven rack about 4 inches from the top).
Place the tortillas on a rimmed sheet pan. Spread 1/4 cup of the beans over 1/2 of each tortilla. Sprinkle the cheese over the beans. Fold the tortillas in half.
Broil until the tops of the tortillas are golden brown, 1 to 2 minutes. Use a metal spatula to flip them over and broil the second side 1 to 2 minutes more until golden brown and the cheese has melted.
Using a chef’s knife, cut the avocado in half and remove the pit. Place the two halves, cut-side up, on cutting board. Use the tip of your paring knife to carefully make slices into the avocado flesh (do not cut through the skin). Then scoop out with a spoon and serve with the quesadillas and hot sauce.
