Mozzarella Sticks (with Cauliflower)

- 1 cup whole-wheat breadcrumbs
- 1 tablespoon flaxseed meal
- 1 cup shredded mozzarella or shredded plant-based mozzarella
- 1/2 cup cauliflower puree
- 1 tablespoon cornstarch
- Extra virgin olive oil, for frying
In a small bowl, stir together the breadcrumbs and flaxseed meal.
In a medium bowl, stir together the mozzarella, cauliflower puree, and cornstarch.
Line a sheet pan with parchment paper. On the pan, shape the mozzarella mixture into 2 1/2-inch long sticks (the mixture will be soft). Sprinkle generously with the breadcrumb mixture, then roll the sticks to coat completely, continuing to shape as you roll. Freeze for 20 minutes.
In a nonstick skillet, heat 1/8 inch of oil over medium-high heat. Add the mozzarella sticks and cook, turning occasionally, until golden brown and crisp. Let cool a few minutes before eating. Serve with Homemade Ketchup.
