Almond Pancakes with Banana Butter

Turn on the flame of your stove to medium-high. Using tongs, hold a papadum over the flame and move it around and flip it. It will bubble and turn white and burn a little in spots. Be sure to keep moving it so it doesn’t burn too much. And be sure get all the edges, too. This shouldn’t take longer than 30 seconds. It will crisp as it cools. Repeat with the remaining papadums.
Break each papadum in 2 or 3 pieces (it’s easier to pick up and eat this way).
Dividing evenly, place the avocado slices over each piece. Squeeze some lemon over the avocado and sprinkle with herbs and a little red pepper.
