Roasted Sweet Potato Coins

Ingredients
  • 2 tablespoons dark brown sugar
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground cumin
  • ¼ teaspoon freshly ground black pepper
  • 1½ pounds sweet potatoes, scrubbed (about 3 medium)
  • 2 tablespoons extra virgin olive oil
Instructions

Heat the oven (with the oven rack in the middle) to 425°F. In small bowl, combine the brown sugar, salt, cumin and pepper (12 turns on pepper mill).

Cut the potatoes into ½-inch thick rounds and transfer to a rimmed sheet pan. Drizzle with the oil, sprinkle with the brown sugar mixture and, using your hands, toss to coat. Arrange in a single layer without overlapping and roast until the potatoes are tender, 25 to 30 minutes.
