Sweet Peas with Parmesan and Lemon

Ingredients
  • 1 teaspoon grated lemon zest (from 1 lemon)
  • 1 tablespoon extra virgin olive oil
  • 1 pound frozen peas
  • 1/4 cup water
  • 1/4 cup grated Parmesan
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
Instructions

First grate your lemon zest.

Place a medium saucepan on the stove and turn the heat on to medium-high. Measure and pour in the oil and heat until it shimmers (1 to 2 minutes). Add the peas and stir to coat. Add the water and bring to a boil. Cover and cook until the peas are heated through, 2 to 3 minutes.

Add the Parmesan, lemon zest, salt, and pepper (about 12 turns on pepper mill). Stir rapidly over the heat until the cheese is melted and creamy.
