Coconut Chia Pudding with Caramelized Bananas

Ingredients
  • 2 tablespoons chia seeds
  • ¼ cup coconut milk
  • 1 teaspoon coconut oil
  • 2 teaspoons light brown sugar
  • 1 teaspoon pure vanilla extract
  • Small handful fresh blueberries
Instructions

To make the chia pudding, in a small serving bowl, stir together the chia seeds and coconut milk. Let stand 10 to 15 minutes, stirring half way through, until it becomes puddinglike.

For the bananas, in a nonstick skillet, melt the coconut oil over medium heat. Add the brown sugar and stir together (it will be a little crumbly).

Over the skillet, slice the banana into about ¼-inch thick rounds, letting them fall into the skillet. Arrange the banana slices in a single layer. Add the vanilla (it will sizzle) and give the skillet a shake. Let cook until the undersides of the banana slices are caramelized, about 2 minutes. Using a spoon, turn the banana slices over and add the blueberries. Stir once. Spoon over the chia pudding.
