Peach Jam and Sriracha Roasted Drumsticks

- 8 chicken drumsticks (about 2 pounds)
- 1/4 teaspoon kosher salt
- 1/2 cup peach jam/preserves
- 1 tablespoon Sriracha
- 1 tablespoon less sodium soy sauce
Heat the oven (with the oven rack in the middle) to 425°F. Pat the chicken dry with paper towels. Sprinkle with the salt.
In a large bowl, whisk together the jam, Sriracha, and soy sauce. Add the chicken and stir to coat. Place them on a rimmed sheet pan and pour any extra jam over each piece. Roast until cooked through, 35 to 40 minutes (you can cut into one to make sure it’s no longer pink).
