Sweet Potato Latkes with Parmesan and Oregano

Ingredients
  • 2 large eggs
  • 1 pound sweet potatoes
  • ½ yellow onion
  • ½ cup all-purpose flour
  • ¼ cup grated Parmesan, plus more for serving
  • 2 teaspoons chopped fresh oregano, plus more for serving
  • ¾ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 1/3 cup extra virgin olive oil or canola oil, plus more if necessary
Instructions

In a large bowl, beat together the eggs.

Using a food processor with the grater attachment, grate the sweet potato and onion. Add them to the eggs. Add the flour, Parmesan, oregano, salt, and pepper and stir together until everything is well mixed.

In a large skillet, heat the oil over medium heat. Use a spoon to scoop out enough of the mixture to shape into a 3-inch wide patty. Slide into the oil. Repeat with more of the mixture without overcrowding the skillet. Cook until golden brown, 2 to 3 minutes per side. Add more oil if necessary as you cook the batches of latkes. Transfer them to a paper towel lined plate.

Serve the latkes sprinkled with a little more Parmesan and oregano.
