Sautéed Spinach and Garlic

- 2 large bunches spinach, tough stems removed (16 cups)
- 2 cloves garlic, sliced
- 2 tablespoons extra virgin olive oil
- ¼ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
Wash and dry the spinach. Slice the garlic.
Heat the oil in a large skillet over medium heat. Add the garlic and cook until fragrant (do not let brown), about 30 seconds. Add half of the spinach and cook, turning with tongs, until it begins to wilt, about 1 minute. Add the remaining spinach and season with the salt and pepper (12 turns on pepper mill) and continue to cook, turning, until wilted, 2 to 3 minutes.
