Grilled Peaches & Coconut Cream

- 5.4-ounce can unsweetened coconut cream
- 2 tablespoons honey
- 1 teaspoon fresh lime juice
- 4 ripe freestone peaches
- 1 teaspoon extra virgin olive oil, plus more for grill
- Grated lime zest
Put the can of coconut cream in the refrigerator to chill. Once cold, scoop it into a medium bowl and whisk until creamy, soft peaks hold.
In a small bowl, stir together the honey and lime juice.
Heat the grill to medium.
Cut the peaches in half and remove their pits. Lightly brush the cut sides with the oil. Brush the grates of the grill using an oiled paper towel. Put the peaches cut side down on the grill. Grill 3 to 5 minutes, until grill marks form. Flip them over with a metal spatula, then lift them off of the grill.
Divide the peaches among bowls. Dividing evenly, drizzle with the honey mixture. Spoon some coconut cream on the side and grate lime zest over the top.
