Broccoli Rabe with Garlic and Crushed Red Pepper

Ingredients
- 1 bunch broccoli rabe
- 1 clove garlic, chopped
- 2 tablespoons extra virgin olive oil
- 1/4 teaspoon crushed red pepper
- 1/4 teaspoon kosher salt
- 1/8 teaspoon freshly ground black pepper
Instructions
First, trim off 1 inch from the bottom of the stems and discard. Then cut the stems crosswise into 1-inch pieces, stopping short of the leaves. Place the stems and leaves in a colander and rinse under cold running water- no need to dry as the water attached to the leaves will help with the steaming.
Chop your garlic.
Place a large pot on the stove and turn the heat on to medium. Add the oil and heat until it shimmers (about 1 minute). Add the garlic and crushed red pepper. Stir for 30 seconds until fragrant.
Add half of the broccoli rabe and, using tongs, stir into the oil- it will shrink down a bit, then stir in the remaining broccoli rabe. Cover with a lid and cook, stirring once or twice, until just tender, about 3 minutes. Season with the salt and black pepper (about 6 turns on pepper mill) and serve.
