Baked Maple Sweet Potatoes

Ingredients
- 4 medium sweet potatoes (about 2 pounds total)
- 4 teaspoons pure maple syrup
- 1/2 teaspoon kosher salt
- 1/8 teaspoon freshly ground black pepper
Instructions
Heat the oven (with the oven rack in the middle) to 400°F. Wash the potatoes and pierce each one several times with the tines of a fork. Line a sheet pan with foil and place the potatoes on it. Roast until the potatoes are tender and easily pierced with the tip of a paring knife, 40 to 50 minutes.
Using the tip of your knife, cut a slit down the middle of the potatoes (be careful of the steam!). Push in the sides to fluff up the potato. Drizzle 1 teaspoon of the syrup over each. Measure 1/2 teaspoon salt in the palm of your hand and with your other hand, pinch and sprinkle evenly over the potatoes. Then, season tops with the pepper (about 2 turns on pepper mill over each).
