Tuna Wrap

Ingredients

  • 1 Kirby cucumber, cut into small pieces
  • 20 grapes, quartered
  • ½ jalapeño, seeded and thinly sliced
  • ¼ cup chopped flat-leaf parsley
  • ½ red onion, chopped
  • ¾ cup canned navy beans, drained and rinsed
  • Juice of 1 lime
  • 1 tablespoon extra virgin olive oil
  • ¼ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 6 ounces jarred yellow fin tuna
  • 4 chard leaves

Instructions

​In a medium bowl, combine the cucumber, grapes, jalapeño, parsley, onion, and beans and stir to combine. Flake the tuna into the bowl. Add the lime juice, oil, salt, and pepper and stir to combine. Divide evenly among the chard leaves. Roll up and eat.

Quarter the grapes and add to the bowl.

Quarter the jalapeño lengthwise and cut out the seeds (if you don't want too much spice), then thinly slice. Add to the bowl.

Chop the parsley and add to the bowl.

Add the beans and stir everything together to combine. Flake the tuna into the bowl.
