Steamed Spinach with Sesame Dressing

Ingredients
  • 2 teaspoons sesame seeds
  • 5 teaspoons less sodium soy sauce
  • 2 teaspoons rice vinegar
  • 1 teaspoon toasted sesame oil
  • ¼ teaspoon sugar
  • 3 bunches fresh spinach (about 12 packed cups)
Instructions

In a small skillet, toast the sesame seeds over medium heat for 2 to 3 minutes, or until light golden brown.

In a small bowl, combine the soy sauce, vinegar, sesame oil, and sugar. Stir together until the sugar dissolves. Stir in the sesame seeds.

Discard any tough stems from the spinach. In a large pot, bring ½ inch of water to a boil over medium-high heat. Add the spinach, cover tightly, and steam for 1 minute, or until wilted. Use tongs to quickly turn the spinach. Drain the spinach a colander and run under cold water to cool. Squeeze out excess water.

Put the spinach on a serving plate and drizzle with the dressing.
