Pistachio and Honey Stuffed Dates

- ½ cup raw pistachios
- 1 tablespoon honey
- 1 teaspoon grated lemon zest
- ½ teaspoon ground cinnamon
- Pinch kosher salt
- 12 pitted dates, such as Medjool
In a food processor, pulse the pistachios until finely chopped. Add the honey, lemon zest, cinnamon, and salt and pulse until well combined. The mixture should hold together when pinched, if not, add a little more honey.
Fill each date with the pistachio mixture, then push the date together to seal.
