Oat Waffles

Active Time: 20 minutes   |   Total Time: 20 minutes   |   Serves 4

Ingredients
  • 1 cup all-purpose flour
  • 1 cup instant oats
  • 2 tablespoons sugar
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt
  • 4 tablespoons unsalted butter
  • 1½ cups buttermilk
  • 1 teaspoon pure vanilla extract
  • 2 large eggs
  • Pure Maple syrup and fresh berries for serving
Instructions

In a medium bowl, measure and whisk together the flour, oats, sugar, baking powder, baking soda, and salt. In a liquid measuring cup, measure the buttermilk and vanilla then add the eggs and whisk to combine. Pour into the flour mixture and stir until just combined (do not over stir).

Place a small skillet on the stove and turn the heat on to medium. Add the butter and melt (or you can melt it in a bowl in the microwave). Stir into the batter.

Heat your waffle iron.

Spoon in the amount of batter that’s right for your waffle maker (and remember, the batter spreads). Cook until golden brown and crisp. Serve with warm syrup and fresh berries.
