- 2 13.5-ounce cans coconut milk
- ¾ cup semisweet chocolate chips (or chopped chocolate)
- 3 tablespoons unsweetened cacao powder or cocoa powder
- 3 tablespoons sugar
- ½ teaspoon pure vanilla extract
In a medium saucepan, bring the coconut milk to a simmer over medium heat. Whisk in the chocolate, cacao powder, and sugar. Continue to whisk until the chocolate is melted. Remove from heat and whisk in the vanilla. Transfer the mixture to a 4-cup liquid measuring cup (for easy pouring) and let cool to room temperature.
Dividing evenly, pour the mixture into popsicle molds (around 8 to 12, depending on the size of your molds).
Pass the molds through warm water to help release the fudgesicles. Serve.
