Chocolate Pudding (with Avocado)

Ingredients

  • ¼ cup trans-fat-free soft tub margarine spread or plant-based butter (We like Miyoko's)
  • 1 cup avocado puree
  • 1 cup confectioners’ sugar
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon pure vanilla extract
  • ½ cup low fat milk or plant-based milk, such as oat or cashew

Instructions

In a medium saucepan, melt the margarine over low heat. Whisk in the avocado puree, sugar, cocoa powder, and vanilla until smooth. Whisk in the milk until creamy.

Serve warm or cold.
