Chocolate Pudding (with Avocado)

- ¼ cup trans-fat-free soft tub margarine spread or plant-based butter (We like Miyoko's)
- 1 cup avocado puree
- 1 cup confectioners’ sugar
- ½ cup unsweetened cocoa powder
- 1 teaspoon pure vanilla extract
- ½ cup low fat milk or plant-based milk, such as oat or cashew
In a medium saucepan, melt the margarine over low heat. Whisk in the avocado puree, sugar, cocoa powder, and vanilla until smooth. Whisk in the milk until creamy.
Serve warm or cold.
