Simple Beef Tacos

- 1 yellow onion, chopped
- 2 teaspoons extra virgin olive oil
- 1 1/4 pounds ground beef (or turkey or chicken)
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon kosher salt
- 1/3 cup water
- 8 corn tortillas
- toppings, such as sour cream, cilantro, cheese, avocado, hot sauce
Heat the oven (with the oven rack in the middle) to 350°.
Chop the onion.
Place a large skillet over medium-high heat. Add the oil and heat until it shimmers (1 to 2 minutes). Add the chopped onion and cook, stirring with a wooden spoon, until softened, 4 to 5 minutes.
Add the beef and cook, breaking it up with your spoon, until it is no longer pink, 5 to 6 minutes. Add in the chili powder, cumin, garlic powder, and salt and cook, stirring, for 1 minute. Add the water and cook 2 to 3 minutes more until the meat is nice and juicy but not soupy. Turn off heat.
Place a small skillet over medium heat. Heat each tortilla 1 to 2 minutes per side (use tongs to flip). Keep them warm by wrapping them in foil and placing in the hot oven until you are ready.
Get your toppings ready. Reheat the meat mixture, if necessary, then fill your tacos.
