Zucchini & Figs

Ingredients
- 1 pound zucchini
- 1 tablespoon extra virgin olive oil
- 1 tablespoon fresh lemon juice
- 16 fresh mint leaves
- 1/8 teaspoon kosher salt
- 1/8 teaspoon freshly ground black pepper
- 8 fresh figs
Instructions
Trim the ends of the zucchini. Use a vegetable peeler to make long, thin strips of zucchini. Put them into a large bowl. Add the oil, lemon juice, mint, salt, and pepper and toss. Cut the figs in half.
Serve the zucchini salad topped with the figs.
