Savory Black & Brown Rice Congee (It’s porridge!)

- 1 cup brown rice
- ¼ cup black rice (Forbidden rice)
- 10 cups water
- ¾ teaspoon kosher salt
- Toppings: Soy sauce, chili sauce, thinly sliced scallion, and grated ginger
This is a delicious savory breakfast.
Put the brown rice and black rice in a fine strainer and rinse. Pour into a large pot and stir in the water and salt. Turn the heat on to medium-high. Let come to a boil then reduce the heat to medium-low and simmer, stirring occasionally but more often as it thickens, until the rice is very, very tender and creamy, about 1½ hours. Add more water if you want it a little thinner. (A slow cooker would be great for this, too.)
Divide the congee among bowls and top with soy sauce, chili sauce, scallion, and ginger (or whatever toppings you like).
