In a food processor, combine the garlic and pine nuts. Pulse a few times until chopped. Add the basil, Parmesan, salt, pepper (about 6 turns on pepper mill), and the oil. Pulse several times until finely chopped. Scrape down the sides with a silicone spatula then pulse until the pesto is smooth.

Smash the garlic and peel. Add to a food processor.

Add the pine nuts and pulse a few times until chopped.

Add the basil. And get into it.

Add the Parmesan, salt, pepper, and the oil. Pulse several times until finely chopped.

Scrape down the sides with a silicone spatula then pulse until the pesto is smooth.
