Basil Pesto

Ingredients

  • 2 cloves garlic, smashed
  • 1/4 cup pine nuts
  • 2 cups loosely packed basil leaves (about 1 bunch)
  • 1/4 cup grated Parmesan
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon freshly ground black pepper
  • 1/3 cup extra virgin olive oil

Instructions

In a food processor, combine the garlic and pine nuts. Pulse a few times until chopped. Add the basil, Parmesan, salt, pepper (about 6 turns on pepper mill), and the oil. Pulse several times until finely chopped. Scrape down the sides with a silicone spatula then pulse until the pesto is smooth.

Smash the garlic and peel. Add to a food processor.

Add the pine nuts and pulse a few times until chopped.
