Sweet and Spicy Pecans

Ingredients
  • 3 tablespoons sugar
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon cayenne pepper
  • 2 teaspoons water
  • 1 cup pecan halves
Instructions

Heat the oven (with the oven rack in the middle) to 375°F. Line a rimmed sheet pan with parchment.

Place your medium saucepan on the stove and add the sugar, salt, cayenne, and water. Stir to combine. Turn the heat on to medium. Let the mixture come to a boil then add the pecans. While still over the heat, stir the pecans until they are well coated.

Immediately pour the pecans onto the prepared pan and, using a fork, spread them out into a single layer and separate them as best you can (do not touch with your finger-really HOT!). Bake until fragrant and bubbling, 8 to 10 minutes.

Let cool in the pan then break up any large clusters before serving.
