Zucchini & Figs

  • 1 pound zucchini
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 16 fresh mint leaves
  • 1/8 teaspoon kosher salt
  • 1/8 teaspoon freshly ground black pepper
  • 8 fresh figs

​Trim the ends of the zucchini. Use a vegetable peeler to make long, thin strips of zucchini. Put them into a large bowl. Add the oil, lemon juice, mint, salt, and pepper and toss. Cut the figs in half.

Serve the zucchini salad topped with the figs.
