Mandarin Orange Granita
Active Time: 10 minutes | Total Time: 3 hours | Serves 4 | Vegan | Gluten Free
- 3 cups fresh mandarin or navel orange juice
- ¼ cup sugar
- 2 tablespoons fresh lemon juice
Into a large liquid measuring cup, juice the oranges, pulp and all. Stir in the sugar and lemon juice. Pour into an 8 x 8-inch metal baking pan and put in the freezer.
After about 1 hour, the mixture will start to form ice crystals. Stir it to break up the crystals - it should be more like a slushie at this point. Freeze again, without stirring, for about 2 hours more, or until completely frozen.
Use a fork to scrape the orange ice into fine shavings. Serve in cold glasses.
