Spicy Slaw with Mint and Cilantro

- ½ head of purple cabbage
- 2 carrots
- 1 jalapeño
- ¼ of a red onion
- ½ cup fresh cilantro leaves
- ½ cup fresh mint leaves
- 5 tablespoons fresh lime juice
- 1½ teaspoons light brown sugar
- ½ teaspoon kosher salt
- 1 tablespoon canola oil
- Brown rice, for serving (optional)
Using a chef’s knife, thinly shred the cabbage and put into a large bowl. Grate the carrots. Seed the jalapeño then thinly slice. Thinly slice the onion. Combine everything with the cabbage. Add the cilantro leaves to the slaw. Coarsely chop the mint and add.
In a small bowl, stir together the lime juice, brown sugar, salt, and oil. Drizzle over the salad and toss well. Let marinate for 5 to 10 minutes and toss again.
Serve as a side or serve with some brown rice to make it a meal.
