Marinated Strawberries and Apricots with Hazelnut Ice Cream

Active Time: 5 minutes   |   Total Time: 15 minutes   |   Serves Serves 4  |  Gluten Free

Ingredients
  • 1 pint strawberries
  • 2 apricots
  • 2 tablespoons sugar
  • 1/4 teaspoon freshly grated nutmeg
  • 1 tablespoon fresh lemon juice
  • 1 pint hazelnut or vanilla ice cream
Instructions

Place the strawberries in a colander and rinse. Using a paring knife, trim the tops of the strawberries. Cut the strawberries in half or, if they’re large, into quarters. Place in a medium bowl.

Cut the apricots in half and remove the pits. Thinly slice the apricots and add to the bowl. Add the sugar, nutmeg, and lemon juice. Stir together. Let marinate 10 minutes or so until the strawberries start to release their juices. Serve over ice cream.
