Cauliflower Salad with Smoked Almonds and Manchego

- For the salad:
- 1 small head cauliflower
- ¼ cup chopped fresh flat-leaf parsley
- ¼ cup golden raisins
- ½ cup smoked almonds, chopped
- Shaved Manchego cheese
- For the vinaigrette:
- ¼ cup fresh lemon juice
- 3 tablespoons extra virgin olive oil
- 2 teaspoons honey
- ½ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
For the salad, cut the core out of the cauliflower and discard. Pull the cauliflower apart into large florets. Thinly slice the florets and put into a large serving bowl.
Chop the parsley and add to the large bowl. Add the raisins.
For the vinaigrette, in a small bowl, whisk together the lemon juice, oil, honey, salt, and pepper. Drizzle over the salad and toss well.
Chop the almonds and scatter over the salad. Use a vegetable peeler or knife to shave the Manchego over the salad (as much as you like).
